Ingredients

  • 2 large beets
  • 2 cloves garlic, peeled, chopped
  • 3/4 cup Greek yogurt
  • 1/2 tsp ground cumin
  • 1/2 tsp paprika
  • 1 Tbsp dill leaves
  • 1 Tbsp lemon juice
  • Salt and pepper, to taste

Preparation

1. Peel the beets and cut into 1-inch pieces. Pour 3 cups of water into the bowl. Place the beets in the steam basket and place the basket in the Prep&Cook bowl. Launch the P2 steam program for 35 minutes. Drain the beets and cool.

2. Place the beets, garlic, yogurt, cumin, paprika, dill and lemon juice in the bowl fitted with the ultrablade knife. Season with salt and pepper. Mix at speed 8 for 15 seconds. Scrape down the sides of the bowl and mix at speed 12 for 30-40 seconds or until mixture is smooth.

3. Spoon into a serving bowl and serve with crackers or vegetable sticks.
