Butter Beans with Cumin

This dish is also delicious by replacing the butter beans with peas, the lemon juice with fresh goat’s cheese and the cumin with mint.

Ingredients

  • 1 lb frozen butter beans
  • 2 Tbsp olive oil
  • 1/4 cup fresh lemon juice
  • 1 Tbsp cumin seeds
  • 1 Tbsp Dijon mustard
  • 1/4 tsp salt
  • Pepper, to taste

Preparation

1. Pour 3 cups of water into the bowl. Place beans in the steam basket and place the basket in the Prep&Cook bowl. Launch the steam program for 20 minutes.

2. Place beans in a serving bowl and add all remaining ingredients. Mix well and serve warm or cold.
