Cilantro Lime Rice

Ingredients

  • 2 cloves garlic, peeled, cut in half
  • 1 Tbsp extra-virgin olive oil
  • 1 cup long grain white rice
  • 2 cups chicken broth
  • 2 Tbsp freshly squeezed lime juice
  • 1 Tbsp freshly grated lime zest
  • ½ tsp ground coriander
  • ½ tsp Kosher salt
  • 1/3 cup chopped fresh cilantro leaves

Preparation

1. Place garlic in bowl fitted with the ultrablade knife. Mix at speed 12 for 10 seconds. Scrape down the sides of the bowl. Replace the ultrablade knife with the mixer.

2. Add olive oil and rice; Mix at speed 3 at 270°F for 3 minutes; remove blade.

3. Add remaining ingredients except cilantro leaves; stir. Set at temperature 210°F for 20 minutes, no speed. Let sit for 5 minutes. Pour cooked rice into large bowl, fluff with a fork and stir in cilantro leaves.
