Cream of Broccoli and Blue Cheese Soup

You can replace the broccoli with cauliflower.

Ingredients

  • 4 cups broccoli florets
  • 1 baking potato, peeled, chopped
  • 2 large leeks (white parts only)
  • 4 cups chicken broth
  • 3 oz blue cheese
  • 1/2 cup whipping cream
  • Salt and pepper, to taste

Preparation

1. Cut the broccoli to remove the florets. Slice the leeks.

2. Place florets, potato, leeks and broth in the bowl fitted with the ultrablade knife. Launch the P1 soup program.

3. At the end of the program, add the blue cheese and mix at speed 10 for 1 minute. Season with salt and pepper.
