Ingredients

  • 1 small onion, peeled, cut into 4 pieces
  • 1 Tbsp extra-virgin olive oil
  • 1 cup long grain white rice
  • 2 cups chicken broth
  • ½ cup raisins
  • 1 tsp curry powder
  • ½ tsp Kosher salt
  • ½ tsp turmeric
  • ¼ tsp freshly cracked pepper
  • ¼ cup slivered almonds, toasted

Preparation

1. Place onion in the bowl with the ultrablade knife. Mix at speed 12 for 10 seconds. Remove the ultrablade knife and replace with the mixer. Add olive oil and launch the P1 simmer program.

2. Remove the mixer. Add remaining ingredients except almonds; stir. Set temperature at 210°F for 20 minutes, no speed. Let sit for 5 minutes. Pour cooked rice into a large bowl, fluff with a fork and stir in almonds.
