Ingredients

  • 4 medium tomatoes
  • 2 1/2 cups tomato juice
  • 3 cloves garlic
  • 1 small onion
  • 1 small cucumber
  • 1 small red bell pepper
  • 1 large green bell pepper
  • 2 slices whole wheat bread
  • 2 Tbsp white wine vinegar
  • 1/4 cup olive oil
  • 1/2 cup basil leaves
  • 1/2 tsp salt

Preparation

1. Peel and roughly chop the garlic, onion and cucumber. Deseed and dice the bell peppers. Roughly chop the tomatoes. Tear bread into pieces.

2. Place all ingredients in the bowl fitted with the ultrablade knife and mix at speed 12 for 3 minutes 30 seconds. Serve cold.
