Green Beans with Bacon and Shallots

Ingredients

  • 12 o z fresh green beans
  • 1 large shallot
  • 2 slices thick applewood smoked bacon

Preparation

1. Pour 3 cups of water in the bowl. Place green beans in the steam basket and place the basket in the Prep&Cook bowl. Launch the P1 steam program at 210°F for 10 minutes. Remove the steam basket and cover to keep warm. Empty the water from the bowl.

2. Peel and quarter the shallot. Place in the bowl fitted with the ultrablade knife. Launch at speed 10 for 15 seconds. Replace the ultrablade knife with the mixer. Scrape down the sides of the bowl.

3. Dice the bacon and add to the bowl. Launch the P1 simmer program at 270°F for 10 minutes, without the stopper. Add the beans to the bowl after 8 minutes and continue to cook the remaining 2 minutes.
