Ingredients

  • 2 cloves garlic
  • 1 medium onion
  • 1 3/4 lbs lamb (shoulder, boned)
  • 2 Tbsp olive oil
  • 2 Tbsp curry powder
  • 1 tsp ground ginger
  • 1 tsp thyme leaves
  • 1 cup coconut milk
  • 1 cup canned diced tomatoes, drained
  • 2 Tbsp tomato paste
  • Salt, to taste
  • 1 small Granny Smith apple

Preparation

Peel the garlic and onion. Cut the lamb into large cubes.

2. Place garlic and onion in the bowl fitted with the ultrablade knife and chop at speed 11 for 10 seconds. Replace the ultrablade knife with the mixer. Add oil and curry powder, ginger and thyme. Launch the P1 simmer program at 270°F for 5 minutes.

3. After 5 minutes, add lamb, coconut milk, tomatoes and tomato paste. Season with salt. Launch the P2 simmer program at 200°F for 45 minutes.

4. Dice the apple and serve with the curry.
