Ingredients

  • 3 cloves garlic
  • 3 Tbsp olive oil
  • 1/8 tsp salt
  • 1 tsp ground coriander
  • 1 tsp cinnamon
  • 1 tsp cumin
  • juice of 1 lime
  • 1 3/4 lbs lamb
  • 3/4 cup vegetable broth
  • 1/4 cup fresh coriander
  • 1/4 cup flat-leaf parsley

Preparation

1. Peel the garlic. Place in the bowl fitted with the ultrablade knife and chop at speed 12 for 10 seconds.

2. Replace the ultrablade knife with the mixer. Add olive oil, salt, coriander, cinnamon, cumin and lime juice. Launch the P1 simmer program at 270°F for 3 minutes.

3. Cut the lamb into cubes and chop the coriander and parsley. Once the garlic is cooked, add lamb, broth and herbs. Launch the P2 simmer program at 200°F for 45 minutes.

4. At the end of cooking, serve immediately with couscous.
