Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup soft butter, diced
  • 2 Tbsp sugar
  • 1 1/4 cups sugar
  • 1/4 cup all-purpose flour
  • 3 eggs
  • 1 Tbsp grated lemon zest
  • 1/4 cup lemon juice

Preparation

1. Preheat the oven to 350°F.

2. Place the crust ingredients in the bowl fitted with the kneading/crushing blade. Mix at speed 8 for 1 minute. Pat into the bottom of a 9-inch square baking pan. Bake for 10 minutes. Wash the Prep&Cook bowl.

3. Place the custard ingredients in the bowl fitted with the whisk. Mix at speed 4 for 1 minute. Pour over the hot crust.

4. Bake for another 20 minutes or until filling is just set. Cool completely. Just before seving, dust with powdered sugar.
