1. Preheat the oven to 350° F.
2. Place brown sugar and peanut butter in the bowl with the kneading/crushing blade. Mix at speed 10 for 1 minute. Scrape down the sides and bottom of bowl.
3. Add remaining ingredients. Mix at speed 10 for 1 minute.
4. Form dough into 1-inch balls and flatten with tines of a fork. Bake on parchment lined cookie sheets 8-10 minutes or until very light brown. Rotate sheets half way through baking for best results.
