Ingredients

  • 1 medium onion
  • 1 medium red bell pepper
  • 1 medium green bell pepper
  • 2 large cloves garlic
  • 1/4 cup olive oil
  • 1/2 tsp dried thyme leaves
  • 1/2 tsp dried basil
  • 2 small zucchinis
  • 2/3 medium eggplant (1 lb)
  • 2 large tomatoes
  • 2 Tbsp tomato paste
  • salt and pepper, to taste

Preparation

1. Peel and quarter the onion. Seed and quarter the bell peppers. Place the onion and bell peppers in the bowl fitted with the ultrablade knife and Pulse for 10 seconds.

2. Replace the ultrablade knife with the mixer. Peel the garlic and crush using the blade of a knife. Place in the bowl with the olive oil. Launch the P1 simmer program at 270°F for 8 minutes, without the stopper.

3. Cube the zucchini, eggplant and tomatoes.

4. At the end of the program, add the thyme, basil, vegetables and tomato paste. Season with salt and pepper. Launch the P2 simmer program at 200°F for 30 minutes. Serve hot or cold.
