Shrimp Cocktail with Sauce

Tomato paste can be used in place of tomato sauce.

Ingredients

  • 1 pasteurized egg yolk
  • 1 tsp yellow mustard
  • 1 tsp white vinegar
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 1 Tbsp tomato sauce
  • 1 Tbsp cognac
  • Few drops Tabasco®
  • 1 cup vegetable oil
  • 3/4 lb peeled and deveined cooked medium shrimps with tails

Preparation

1. Place the egg yolk, mustard, vinegar, salt and pepper in the bowl fitted with the mixer. Launch at speed 7 and gradually add the oil.

2. Once the mayonnaise has been whipped, add tomato sauce, cognac and Tabasco®. Mix for another 1 minute.

3. Serve the sauce with the shrimp.
