Ingredients

  • 5 small shallots
  • 1/2 lb thick cut bacon
  • 3/4 lb pork loin
  • 1 Tbsp butter
  • 3 (5.2 oz) pkgs chestnuts
  • 1/4 cup chopped fresh parsley
  • 1/2 cup diced apple
  • 1/4 tsp poultry seasoning
  • 1/2 tsp salt
  • 1/4 tsp pepper

Preparation

1. Preheat the oven to 350°F. Spray a 2-quart oven-safe baking dish with nonstick cooking spray.

2. Peel the shallots. Dice the bacon and pork loin. Place shallots in the bowl fitted with the ultrablade knife and mix at speed 12 for 20 seconds. Replace the ultrablade knife with the mixer. Add the bacon, pork loin and butter. Launch the P1 simmer program at 270°F for 4 minutes.

3. Replace the mixer with the ultrablade knife. Add all remaining ingredients and mix at speed 12 for 10 seconds. Bring the mixture to the center of the bowl using a spatula and mix again for 10 seconds. If you would like stuffing that is less coarse, mix again until desired consistency is reached.

4. Spoon stuffing mixture into the prepared dish and cover. Bake for 35-40 minutes or until temperature reaches 160°F.
