Tilapia with Lemon Pesto

Ingredients

  • 4 small tilapia fillets
  • 1/4 cup fresh lemon juice
  • 2 Tbsp chopped fresh dill
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 2 Tbsp pesto (see p. 57

Preparation

1. Place the fish fillets on a plate. Cover with lemon juice and sprinkle with dill, salt and pepper. Cover and refrigerate for 30 minutes.

2. Spread each fillet with 1/2 Tbsp. pesto. Roll up the fillets. Pour 3 cups of water into the bowl. Line the steam basket with parchment paper. Place the rolls in the steam basket and place the basket in the Prep&Cook bowl. Launch the P1 steam program for 20 minutes.

3. Serve immediately with rice.
