Amaretto Cookies


Make sandwich macaroons by spreading chocolate hazelnut spread on the back of one cookie and topping with another cookie.

  • 3 egg whites
  • 1 cup superfine sugar
  • 1 (8 oz) pkg almond paste
  • 1/4 tsp almond extract
  • Powdered sugar


1. Preheat the oven to 325°F.

2. Place egg whites in the bowl fitted with the whisk. Mix at speed 7 for 5-6 minutes or until very stiff, without the stopper.

3. Add sugar and mix at speed 6 for 2 minutes. Scrape down the sides of the bowl. Crumble and add almond paste and almond extract. Mix at speed 10 for 20 seconds.

4. Using a tablespoon, drop the cookie dough on a cookie sheet lined with parchment paper. Bake for 18-20 minutes or until light brown; cool. Sprinkle with powdered sugar before serving.
