1. Peel the carrots and shave into strips using a peeler. Cut the chicken breasts into strips. Wash and chop the cilantro.
2. Place carrots, chicken, orange zest and 1 Tbsp. cilantro in a bowl. Mix together with a spatula.
3. Pour 3 cups of water into the bowl. Place the carrot/chicken mixture into the steam basket, making sure the chicken pieces are separated. Place the basket into the Prep&Cook bowl and launch the P1 steam program for 20 minutes.
4. At the end of cooking, transfer to a serving platter and garnish with the remaining cilantro. Season with salt, drizzle with olive oil and serve with rice.
