  • 2 or more tablespoons Olive Oil
  • ¼ Cup Smoked Bacon Lardons
  • 3 ½ to 4 ½ pounds chicken, cut into parts
  • 1 ½ Cups chopped Onion
  • 2/3 Cup heirloom carrots chopped into 1-inch pieces
  • 2 crushed Garlic Cloves
  • One bunch Fresh Thyme
  • 1 Cup fresh tomatoes
  • ½ Cup Dried and assorted mushrooms
  • ¼ Cup Cognac
  • 2 Cups White Wine
  • 2 Cups Homemade Chicken Stock
  • Salt and Freshly Ground Black Pepper


Set the All-Clad Gourmet Multi-cooker on medium to medium high and add the olive oil. Place the bacon lardons and chicken into the multi-cooker, turning frequently, until nicely brown on all sides. Add onions, carrots, garlic, thyme and sauté. Add the tomatoes and mushrooms into the multi-cooker and stir. Next, you’ll pour Cognac, white wine and chicken stock into the multi-cooker and set heat to low-med / simmer. Place the lid on top and allow to cook for 25 minutes. After the 25 minutes is up, remove the chicken and allow the braising mixture to reduce to a sauce like consistency. Serve immediately.
