Fried Catfish Sandwich with Pineapple Tartar Sauce

Ingredients

  • 6 each 3 oz catfish fillets
  • 6 brioche buns
  • Pineapple Tartar sauce
  • 1/8 cup small dice jalapenos
  • ½ cup chopped parsley
  • 1/8 c chopped capers
  • 1 small dice red onion
  • 1 tsp cayenne
  • 1 tsp paprika
  • 1 lemon zested and juiced
  • 1 teaspoon cayenne pepper
  • Mix all in a mixing bowl. Check for seasoning.
  • Cabbage Slaw
  • 2 c thinly shaved red cabage
  • 1 carrot finely grated
  • ¼ c cilantro
  • 1 red bell pepper julienned
  • Catfish Buttermilk Brine
  • 1 qt buttermilk
  • 2 shallots; julienne
  • 10 cloves garlic; smashed
  • 1 bunch thyme
  • ½ cup chili oil
  • 4 T hot sauce plus extra for seasoning fish after frying
  • 4 T jerk spice (see spice mix below)
  • 1 T chili flakes
  • 6 T salt
  • Method- mix all ingredients and soak catfish fillets overnight
  • Jerk Spice Mix
  • 1T cayenne pepper
  • 1T dark brown sugar
  • 1 tsp chili powder
  • 1tsp garlic powder
  • 1tsp onion powder
  • 1 T paprika
  • 1/8tsp allspice
  • 1/8 tsp cinnamon
  • 1/4 tsp ginger

Preparation

Mix all dry ingredients and add 2 cups all-purpose flour. Dredge the flour and shallow fry on medium heat until golden brown on each side, about 3 minutes on each side. Remove from pan and season with salt and a couple of drops of hot sauce. Meanwhile, mix the cabbage and carrots with the tartar sauce until creamy. Cut the bun in half place the slaw on the bun and then place the catfish on top. Serve with salad or potato chips
