1. Place the egg and sugar in the bowl fitted with the whisk and mix at speed 7 for 1 minute. Sift together flour, baking powder, baking soda and salt.
2. Add flour mixture to the eggs with the buttermilk and melted butter. Scrape down the sides of the bowl. Mix at speed 7 for 15 seconds. Scrape down the sides of the bowl and mix for another 15 seconds.
3. Heat a little butter in a skillet or griddle on medium heat. Drop batter onto the skillet, using a tablespoon of batter for each pancake. Cook for about 1 minute on each side or until golden brown. Serve pancakes with jam and whipped cream.
