Get the pan hot and keep the snow peas moving around. Make sure the pan is really really hot.! You have to let the snow peas sit and sear for a minute or two and move them around. Do not try to get color on every side of every snow pea. The contrast between a side that has been seared and has not been seared is actually really nice in the dish.

Directions to prepare buttermilk ranch dressing: Place all ingredients into a medium sized mixing bowl. Whisk together until completely combined.
Directions to prepare snow peas dish: Place the snow peas in a medium sized mixing bowl and toss with the olive oil and salt.
Heat All-Clad outdoor round fry pan on the grill on high heat for 5 minutes. Evenly spread snow peas on the fry pan, turning the snow peas every 1-2 minutes for 5-6 minutes until snow peas are slightly tender and charred on the outside.
Spoon 3-4 tablespoons or desired amount of buttermilk ranch on the base of the plate. With tongs transfer the snow peas to the plate. Finish the dish with red pepper flakes and lemon zest on top.
