  • 3 cups water (use the measuring cup provided with the grain cooker)
  • 2 cinnamon sticks
  • 6 whole cardamom pods, give them a little whack to open them up just a little
  • 6 whole cloves
  • 1” piece ginger, sliced in thin rounds, skin on
  • 1 teaspoon whole black pepper
  • 2 black tea bags
  • 2 teaspoons ground turmeric
  • 3 teaspoons sugar (more if you prefer it sweeter)
  • 1 cup milk (use the measuring cup provided with the grain cooker) Almond, soy, or coconut milk would work great as well.


In the All-Clad Rice & Grain Cooker, add 3 cups of water, cinnamon sticks, cardamom, cloves, ginger, black pepper. Set the grain cooker to “SAUTÉ.”

When the water comes to a boil, cover with the lid and change the setting to SLOW COOK on the low. Simmer for 10 minutes. Turn cooker back on to SAUTE and bring back to a boil. Once boiling, add the tea bags. Cover with lid and turn cooker off. Let the tea steep for 10 minutes.

After the tea has steeped, add turmeric, sugar, and milk and stir to incorporate evenly. Set cooker to SAUTÉ and bring chai back to a boil, then turn cooker off. Strain the hot chai through a fine mesh strainer, reserving the chai and discarding the ingredient bits and teabags.

Serve hot, or pour over ice to serve cooled.
