1. Peel and chop the onion. Place onion and oil in the bowl fitted with the mixer and launch the P1 simmer program at 270°F for 5 minutes.
2. Cut the beef into 1-inch pieces. Add beef, curry paste and cream of coconut to the bowl and stir to combine. Launch the P2 simmer program at 200°F for 2 hours.
3. Peel and cut the potatoes into 1-inch pieces. After 1 hour 15 minutes of cooking, add the potatoes and fish sauce. Stir to combine and continue to cook for remaining 45 minutes or until potatoes are tender. Transfer to a serving dish and garnish with fresh chopped cilantro leaves. Serve with rice.
