  • 1 whole chicken (4–5 lbs)
  • 2 lemons, halved
  • 1 head of garlic, halved crosswise
  • 4 tbsp unsalted butter, softened
  • 2 tbsp olive oil
  • 2 tsp kosher salt
  • 1 tsp black pepper
  • 4 sprigs fresh rosemary
  • 6 sprigs fresh thyme
