California Green Goddess Dressing


This world-famous dressing was created all the way back in 1925 at the Palace Hotel in San Francisco for actor George Arliss who was staring in a play "The Green Goddess" while staying at the hotel.

Ingredients

  • 1 egg yolk
  • 1 Tbsp lemon juice
  • 1 cup oil
  • Salt and pepper
  • 1 Tbsp champagne vinegar
  • 1/2 cup chopped spinach
  • 1/2 cup chopped parsley
  • 1/4 cup chopped tarragon
  • 3 Tbsp chopped chives

Directions

  1. Make a basic aioli and add champagne vinegar, spinach, and fresh herbs.
  2. Using a hand blender, blitz until herbs are evenly dispersed and dressing is emulsified.
  3. Serve over seasonal, grilled veggies or as a dressing for your favorite salad.
