California Green Goddess Dressing
This world-famous dressing was created all the way back in 1925 at the Palace Hotel in San Francisco for actor George Arliss who was staring in a play "The Green Goddess" while staying at the hotel.

Ingredients
- 1 egg yolk
- 1 Tbsp lemon juice
- 1 cup oil
- Salt and pepper
- 1 Tbsp champagne vinegar
- 1/2 cup chopped spinach
- 1/2 cup chopped parsley
- 1/4 cup chopped tarragon
- 3 Tbsp chopped chives
Directions
- Make a basic aioli and add champagne vinegar, spinach, and fresh herbs.
- Using a hand blender, blitz until herbs are evenly dispersed and dressing is emulsified.
- Serve over seasonal, grilled veggies or as a dressing for your favorite salad.
