Ingredients
- 4 boneless, skinless chicken breasts (pounded to ½ inch thickness)
- 1 cup all-purpose flour for dredging
- 2 tbsp avocado oil
- 3 tbsp unsalted butter + 1 tbsp to finish
- 3 cloves garlic minced
- 1 shallot minced
- ½ cup dry white wine
- 1 cup low sodium chicken broth
- ¼ cup fresh lemon juice
- 1 tsp of lemon zest
- 3 tbsp capers rinsed and drained
- ¼ cup fresh basil chopped
- Salt and pepper to garnish
- Lemon slices for garnish
Directions
- Season chicken breasts with salt and pepper, then lightly dredge in flour, shaking off excess.
- Heat the oil and 1 tbsp butter in the All-Clad 5 qt Sauté pan over medium-high heat.
- Add chicken and sear for 4–5 minutes per side until golden brown and cooked through. Transfer to a plate.
- Reduce to medium heat. Add remaining butter and garlic; sauté until fragrant, about 30 seconds.
- Deglaze the pan with the white wine, scraping up the brown bits (fond). Simmer for about 2 minutes.
- Add the chicken broth, lemon juice, zest, and capers. Simmer for another 2 to 3 minutes.
- Turn the heat to low, add the remaining cold butter, and swirl the pan to completely integrate. Taste and adjust seasoning if needed.
- Return the chicken to the pan, spoon the completed sauce over the chicken, and simmer for two minutes to reheat the chicken.
- Sprinkle with fresh basil before serving. Garnish with lemon segments.
