North West Montana Smoked Salmon Omelette


What's better than Salmon from the North West? How about Salmon for breakfast.

Ingredients

  • 4 eggs
  • 1 tablespoon creme fraiche
  • salt and pepper
  • 1/2 cup Pacific smoked salmon, chopped
  • 2 tablespoons chives, chopped
  • 3 tablespoons butter

Directions

  1. In a medium bowl, pool the eggs with the creme friache, chives, and salt and pepper and whisk to combine.
  2. Heat a nonstick pan over medium-high heat and add the butter. When the butter foams add the eggs.
  3. Cook the omelette, add smoked salmon into the center, and carefully fold.
  4. Serve hot with a side of fresh greens or potatoes.
