South Texas Chili Braised Brisket


Instead of a typical smoked brisket, this version is almost effortless and full of flavor using a slow cooker and smokey dried chilis

Ingredients

  • 2 lbs brisket
  • salt and pepper
  • 1/2 cup Alamo beer (or other light ale)
  • 4 cups beef stock
  • 2 carrots, chopped
  • 1 large white onion, chopped
  • 3 dried chili peppers (morita or guajillo)

Directions

  1. Season brisket generously with salt and pepper
  2. Sear on all sides in the slow cooker and deglaze with beer
  3. Add stock, carrots, onions, and chilis
  4. Baise until tender
