Wisconsin Cranberry Curd Tartlets

Ingredients
- 12 ounces cranberries
- juice of one orange
- 1 1/4 cups sugar
- 6 large egg yolks
- 6 tablespoons butter, cut into cubes
- 1 1/4 cups unbleached all-purpose flour
- 1 Tbs. sugar
- 1/4 tsp. salt
- 1 stick cold unsalted butter, cut into 1/4-inch cubes
- 3 Tbs. very cold water
Directions
- Make basic pie dough and rest in the refrigerator overnight.
- Combine the cranberry puree with the sugar and egg yolks and make the curd using a double boiler on the stovetop.
- Strain curd, whisk in butter and spoon into prepared pie crusts. Cool, and top with whipped cream.
