Wisconsin Cranberry Curd Tartlets


Transport yourself to a serene landscape of Wisconsin with one bite of this sweet and tangy treat.

Ingredients

  • 12 ounces cranberries
  • juice of one orange
  • 1 1/4 cups sugar
  • 6 large egg yolks
  • 6 tablespoons butter, cut into cubes
  • 1 1/4 cups unbleached all-purpose flour
  • 1 Tbs. sugar
  • 1/4 tsp. salt
  • 1 stick cold unsalted butter, cut into 1/4-inch cubes
  • 3 Tbs. very cold water

Directions

  1. Make basic pie dough and rest in the refrigerator overnight.
  2. Combine the cranberry puree with the sugar and egg yolks and make the curd using a double boiler on the stovetop.
  3. Strain curd, whisk in butter and spoon into prepared pie crusts. Cool, and top with whipped cream.
