Pancakes with Banana, Walnuts, and Caramel Sauce

Ingredients

Caramel Sauce

  • Caramel Sauce
  • 1/2 cup of sugar
  • 1/4 cup of water
  • 2 tablespoons of butter
  • 1/4 cup of heavy cream

Pancakes

  • 2 cups of All Purpose flour
  • 1/4 cup of sugar
  • 4 teaspoons of baking powder
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of baking soda
  • 1 3/4 cups of whole milk
  • 1/4 cup of butter melted and slightly cooled
  • 2 teaspoons of vanilla extract
  • 1 large egg
  • Roughly 1/4 cup of chopped walnuts
  • 1 banana cut in 1/4 inch slices

Directions

Caramel Sauce:

  1. Place the sugar and the water in a NS Pro(TM) Nonstick 2 qt. Sauce Pan and heat over medium low heat until the sugar dissolves. Boil this mixture for about 5 minutes. Do not stir or touch. Once the mixture begins to turn a light golden brown and the consistency is thickened, remove from the heat. Add the butter and cream. Mix in to the sugar water mix completely and allow to cool.

For the Pancakes:

  1. In a large mixing bowl, combine your dry ingredients including flour, sugar, baking powder, baking soda, and salt. Whisk to combine.
  2. Make a well in the dry mix. Add the milk, cooled melted butter, vanilla, and egg into the well. First, whisk the wet ingredients together inside the well. Then fold the wet mix into the dry mixture. Mix until a smooth batter is formed but be sure not to over work the batter.
  3. While the batter rests heat your NS Pro(TM) Nonstick Double Burner Griddle Pan over medium heat. Lightly grease the pan with either oil or butter. This is more for flavoring as the pan itself is nonstick.
  4. Pour roughly 1/4 cup of the batter on the griddle pan and repeat to fill the griddle.
  5. When the underside is golden and bubbles begin to appear on the surface, flip them over and cook until golden brown on the other side. This should take roughly 6 minutes total. Repeat this process with the remaining batter.
  6. Serve immediately topped with the bananas and walnuts. Drizzle with the caramel sauce.

Pro Tip

Make sure to not overwork the batter and instead mix gently with a light hand. This will ensure you do not create a thick texture which will result in flat pancakes.
