Spiced Peach Tarte Tatin


Summer gives us one of my favorite fruits. Peaches. These precious fruits offer sweetness balanced with acidity that will pair perfectly with spices and rich caramel. This dessert gives an elevated presentation for the Peach to stand out for any occasion.

Ingredients

  • 7-8 Ripe Peaches roughly the same size peeled, halved, and pitted
  • 1/2 Cup or 100 grams of Granulated Sugar
  • 1/4 Cup or 50 Grams of Butter
  • 3 Whole Star Anise
  • 1 Tsp Grated Ginger
  • 1 Vanilla Pods Split in Half or 1 Tsp Vanilla Extract.
  • 1 Sheet Puff Pastry

Directions

  1. Preheat the oven to 375 degrees F.
  2. Melt the butter in the Fusiontec Skillet.
  3. Sprinkle the sugar evenly on top of the butter. Shake the pan if needed to even out. Let this cook on Medium-Low for 5 minutes.
  4. Add the Grated Ginger to the pan and combine with Caramel.
  5. Add the split Vanilla Pod over the middle of the pan and arrange the Star Anise around the pan evenly.
  6. Add the Peaches to the pan slightly overlapping. Cook on Medium-Low for 15 to 20 minutes. The Caramel will be well browned. Remove from the heat.
  7. Roll out your puff pastry on a floured surface to about 1/8 inch thick. Using a bowl roughly the same size as your skillet, take a sharp knife and cut a circle the same size as the top of your skillet out of the dough. Lay the cut pastry on top of the pan. Using the back of a spoon, lift the peaches slightly and fold the dough underneath. Take a sharp paring knife and cut 3 small slits around the center of the dough.
  8. Bake in the oven for 30-35 minutes or until the crust is golden brown. Remove from oven and let rest for 15 minutes in the pan.
  9. Slip a knife around the skillet to loosen any hardened Caramel. Apply your serving dish on top of the skillet. Carefully in one even motion turn your skillet over so that your finished Tarte Tatin will sit on your serving plate. Pull your skillet away.
  10. Serve by itself or with a scoop of vanilla ice cream.
