30 Minute Meal Healthy Taco Casserole


Rachel Ray made the 2000s' weeknight dinners so much more exciting. Here is our take on making a fiesta happen in under 30 minutes. Margaritas are optional but encouraged.

Ingredients

  • 1 lb Ground Turkey
  • 1 small Yellow Onion Chopped
  • 2 Poblano Peppers Chopped
  • 2 Cloves of Garlic Minced
  • 2 cups Beans (Can use black, pinto, or a combo of both)
  • 1 tbsp Tomato Paste
  • 2 tbsp of Taco Seasoning Mix (Recipe below for homemade)
  • 1/2 cup Chicken Stock
  • 1 cup Frozen Corn Kernels thawed
  • 1 cup Freshly Shredded Cheddar Cheese
  • Cilantro for Garnish
  • Add ons for Taco toppings can include (Pico De Gallo, Guacamole, Sliced Jalapenos, Limes, Sliced Avocado, Shredded Lettuce, and Crema)
  • Corn or Flour tortillas
  • Salt and Pepper to taste

Homemade Taco Seasoning Mix

  • 1/4 cup Chili Powder
  • 2 tbsp Cumin
  • 2 tsp Paprika
  • 1 tsp Dried Oregano
  • 1 tsp Coriander
  • 1 tsp Garlic Powder
  • 1 tbsp Salt
  • 2 tsp Black Pepper
  • Zest of 1 Lime

Pro Tip

Ground turkey can become dry. Try using ground turkey with 10% fat content to make it as juicy as possible.

Directions

  1. Preheat broiler on high
  2. Heat 1 tbsp oil in your Casserole Pan. Add your turkey to the pan breaking it down for roughly 5 minutes. Remove from the pan and set aside.
  3. Heat 1 tbsp oil in the pan and add your Onions and Peppers. Cook for 5 minutes and then return your turkey to the pan.
  4. Add the Garlic and Taco Seasoning to the pan and cook for 1 minute until fragrant. Add the beans to the pan. Pour in the chicken stock, combine together and let simmer till reduced down roughly 5 minutes. Fold in your corn kernels. Season with Salt and pepper to taste
  5. Sprinkle the Grated Cheddar Cheese all around the top and broil for 2 minutes until cheese is bubbly.
  6. Garnish with fresh cilantro and your taco toppings
