Adding a nice char gives a smokey finish to this salsa. Tomatillos give a bit more acidity and less sweetness than tomato salsa recipes.

Ingredients
- 1 lb tomatillos
- 1/2 white onion
- 3 mini sweet peppers (can use yellow, orange, or red variety)
- 2 Serrano Chiles (use one if you do not like it spicy)
- 3 cloves of chopped garlic
- 1/2 cup chopped cilantro (leaves and soft stem tops)
- Juice of 1 lime
- 1/2 tsp ground cumin
- 1 tbsp grapeseed oil
- Salt to taste
Directions
- Heat your grill over medium to medium-high heat. Add your All-Clad Grill Pan to grill. Let heat for 5 minutes.
- In a large All-Clad Mixing Bowl, add the tomatillos, onion, peppers, and Serrano Chiles. Add 1 tbsp of grapeseed oil and season with salt. Toss to combine. Place on the grill and let char for 10 minutes or so or until the vegetables are nicely charred all around.
- Remove from the grill. Put into a large bowl. Add the cilantro, garlic, cumin, and lime juice. Season with salt. Using your immersion blender, blend the mixture leaving it a bit chunky to add texture to the salsa. If needed, adjust salt to taste.
