Harissa Glazed Cauliflower Steak
This versatile vegetable is paired with a sweet and spicy sauce ready to give you a delicious option for a vegetarian weeknight meal.

Ingredients
For the Cauliflower:
- 1 head of Cauliflower
- 1 tablespoon, plus 1 teaspoon of olive oil
- 1 teaspoon of salt
- ½ teaspoon pepper
For the Harissa Glaze:
- ¼ cup of honey
- 2 to 3 tablespoons of harissa paste depending on your spice preference
- 1½ teaspoons of white wine vinegar
- 1 clove of garlic, grated
- salt and pepper to taste
Directions
- Preheat the oven to 400°F.
- Cut the cauliflower into roughly ¾-inch thick slices.
- Lay the cauliflower out on an All-Clad D3 Stainless Bonded Ovenware 10 x14 Inch Roasting Sheet and season them with 1 teaspoon of oil, 1 teaspoon of salt, and ½ teaspoon of pepper.
- In an All-Clad D3 Stainless 12 Inch Fry Pan heat 1 tablespoon of oil over medium-high heat. When hot, add the cauliflower steaks and sear for 4 minutes on both sides. Reserve on the side.
- Wipe the pan clean and add the harissa glaze ingredients to the pan. Bring to a simmer and keep on a low simmer stirring consistently until thickened. Roughly 2 minutes.
- Add the cauliflower steaks back to the pan and coat with the sauce on both sides.
- Remove the cauliflower from the pan and place it onto the roasting sheet. Place the cauliflower in the oven and cook for 5 minutes.
- Turn the oven to broil and cook for an additional minute to caramelize the sauce. Do not let caramelize too long or it will burn.
- Remove from the oven and serve.
Pro Tip:
The sweet and spicy flavors of the cauliflower will pair great with a creamy mash of chickpeas and some greens of your choosing.
