South Carolina Low Country Lobster Salad


The flavors of a traditional Low Country Boil combined with fresh lobster create a main course salad that will have you coming back for more!

Ingredients

  • 4 cobs fresh corn
  • 3 pounds red potatoes, quartered
  • 1/2 pound smoked sausage, sliced
  • 2 tablespoons old bay seasoning
  • 1 teaspoon paprika
  • salt and pepper
  • 2 pounds cooked lobster meat
  • 1/2 cup fresh lemon juice
  • 1/3 cup olive oil
  • 3 tablespoons dijon mustard
  • 4 green onions, sliced
  • 1 garlic clove, minced
  • salt and pepper

Directions

  1. Bring a large pot of water to a boil, add old bay seasoning, paprika, potatoes, and sausage, and return to a boil.
  2. Cook for 10 minutes then add corn and return to a boil. Cook an additional 5 minutes or until potatoes are tender and the corn is cooked and then drain.
  3. Cut kernels from cobs and place them in a large bowl. Add in lemon juice, olive oil, mustard, green onions, and garlic and stir to combine.
  4. Fold in potatoes, sausage, and lobster meat and season with salt and pepper and additional old bay seasoning to taste.
