Oatmeal Apple Buckle

Ingredients
Apple Pie filling
- 4 Granny Smith Apples sliced in 1/2 inch pieces
- 2 tablespoons of lemon juice
- 1/4 cup of chopped walnuts (optional)
- 1/4 cup of granulated sugar
- 1/4 tsp of nutmeg
- 1/2 tsp of cinnamon
- 1/8 tsp of all spice
- zest of one orange
- 1 tablespoon of maple syrup
- 1/4 tsp of salt
Cake Batter
- 1/2 cup all-purpose flour
- 1 tablespoon of sugar
- 1 tablespoon of baking powder
- 1/4 tsp of salt
- 1/2 cup nondairy milk (we used almond milk)
- 1/2 tablespoon of apple cider vinegar
- 1/2 tsp of vanilla extract
Oatmeal Crisp topping
- 1/2 cup of all-purpose flour
- 2/3 cup of old fashioned rolled oats
- 1/3 cup of loosely packed brown sugar
- 1/2 tsp of salt
- 1/4 tsp of cinnamon
- 1/2 cup of cold butter cut into 1 tbsp pieces
Directions
- Preheat your oven to 375 degrees. Use 1 tbsp of butter to prepare your Pro-Release Square baking pan.
- In a large mixing bowl, combine the apples and the lemon juice. Toss to coat completely. Add the walnuts, sugar, cinnamon, nutmeg, all spice, zest, syrup, and salt. Use your hands to combine completely. Pour evenly into your prepared Pro-Release square baking pan.
- Make the cake batter. Combine the flour, sugar, salt, and baking powder. Whisk to combine. In a separate bowl combine your wet ingredients of nondairy milk, vinegar, and vanilla. Pour into the dry ingredients and whisk until just smooth. Pour evenly over the apples in the square baking pan.
- Make the oatmeal crisp topping. In a separate mixing bowl, combine the flour, oats, brown sugar, cinnamon, and salt. Use your fingers to cut the cold butter into the oatmeal mixture completely. In small crumbles make an even layer on top of the batter.
- Bake in the oven for 30 to 45 minutes or until cooked through. You can use a tooth pick to check if the batter is fully cooked in the center of the pan.

Pro Tip
All Spice usually consists of five spices including cinnamon, cloves, fennel, star anise and Szechuan pepper. Together they will add a different feel to the usual warmth an apple buckle traditonally gives. To create a more generous sized dessert, increase the ingredients and use a 9x13 baking pan.
