KellyAnn's Balsamic Pork Chops
An easy weeknight one-pan meal adapted from an online recipe. Healthy, simple, and no-frills. I was tired of over-cooking pork chops, and this recipe made it foolproof.

Ingredients
- 6 boneless center-cut pork chops
- 1/2 tsp kosher salt, divided
- 3/4 tsp black pepper, divided
- 1/4 cup olive oil, divided
- Small red potatoes, sliced in half
- 3 tbsp balsamic vinegar
- 2 teaspoon tomato paste
- 1 tbsp dried thyme
- 1 medium red onion, peeled and cut into wedges
- 1/2 cup crumbled feta or gorgonzola cheese
Directions
- Preheat oven to 425°F
- Sprinkle pork evenly with salt and pepper
- Add tsp of oil to the pan, swirl to coat. Heat pan over medium-high heat.
- Add pork to pan, cook about 3 mins per side until evenly browned (do not cook through)
- Remove pork from the pan and place it on a plate to the side.
- Reduce heat to medium, add a little oil.
- Place potatoes cut side down, cook 2 mins.
- Remove pan from heat.
- Combine remaining pepper, oil, balsamic vinegar, and tomato paste in a bowl and whisk together.
- Add onion to the mixture and toss to coat.
- Add onion mixture to pan with potatoes (do not add pork at this time).
- Bake for 25 minutes, stirring 10 minutes in.
- Arrange pork chops over potato and onion mixture.
- Bake for 10 minutes, or until the thermometer registers 145°F.
- Plate individual portions and sprinkle crumbled cheese on top for servings.
