KellyAnn's Balsamic Pork Chops


An easy weeknight one-pan meal adapted from an online recipe. Healthy, simple, and no-frills. I was tired of over-cooking pork chops, and this recipe made it foolproof.

Ingredients

  • 6 boneless center-cut pork chops
  • 1/2 tsp kosher salt, divided
  • 3/4 tsp black pepper, divided
  • 1/4 cup olive oil, divided
  • Small red potatoes, sliced in half
  • 3 tbsp balsamic vinegar
  • 2 teaspoon tomato paste
  • 1 tbsp dried thyme
  • 1 medium red onion, peeled and cut into wedges
  • 1/2 cup crumbled feta or gorgonzola cheese

Directions

  1. Preheat oven to 425°F
  2. Sprinkle pork evenly with salt and pepper
  3. Add tsp of oil to the pan, swirl to coat. Heat pan over medium-high heat.
  4. Add pork to pan, cook about 3 mins per side until evenly browned (do not cook through)
  5. Remove pork from the pan and place it on a plate to the side.
  6. Reduce heat to medium, add a little oil.
  7. Place potatoes cut side down, cook 2 mins.
  8. Remove pan from heat.
  9. Combine remaining pepper, oil, balsamic vinegar, and tomato paste in a bowl and whisk together.
  10. Add onion to the mixture and toss to coat.
  11. Add onion mixture to pan with potatoes (do not add pork at this time).
  12. Bake for 25 minutes, stirring 10 minutes in.
  13. Arrange pork chops over potato and onion mixture.
  14. Bake for 10 minutes, or until the thermometer registers 145°F.
  15. Plate individual portions and sprinkle crumbled cheese on top for servings.
