Summer in Maryland isn't complete without a bite of Blue Crab. Try something new by folding them into these chewy dumplings!
½ pound lump blue crab
¼ cup yellow onion, minced
½ cup finely shredded cabbage
1 teaspoon lemon juice
2 cloves garlic, minced
1 tablespoon fresh grated ginger
salt and pepper
chili flakes, to taste
2 tablespoons soy sauce
1 tablespoon cornstarch
Dumpling wrappers (store-bought or homemade)
Place 1 to 1 1/2 teaspoons of filling in the center of the wrapper and bring the sides up to pinch at the top.
Preheat a large pan over medium-high heat. Add 2 tablespoons oil to the skillet. Add the potstickers down into the skillet to sear.
Brown the bottoms for approximately 2 minutes, then flip and add about 1/2 cup warm water to the skillet -enough water to come a third of the way up the side of the potstickers.
Cover and let the dumplings steam for 2-3 minutes, until the water has evaporated.
