Spicy Maryland Blue Crab Potstickers


Summer in Maryland isn't complete without a bite of Blue Crab. Try something new by folding them into these chewy dumplings!

Ingredients

  • ½ pound lump blue crab
  • ¼ cup yellow onion, minced
  • ½ cup finely shredded cabbage
  • 1 teaspoon lemon juice
  • 2 cloves garlic, minced
  • 1 tablespoon fresh grated ginger
  • salt and pepper
  • chili flakes, to taste
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • Dumpling wrappers (store-bought or homemade)

Directions

  1. Place 1 to 1 1/2 teaspoons of filling in the center of the wrapper and bring the sides up to pinch at the top.
  2. Preheat a large pan over medium-high heat. Add 2 tablespoons oil to the skillet. Add the potstickers down into the skillet to sear.
  3. Brown the bottoms for approximately 2 minutes, then flip and add about 1/2 cup warm water to the skillet -enough water to come a third of the way up the side of the potstickers.
  4. Cover and let the dumplings steam for 2-3 minutes, until the water has evaporated.
