Pecan Spiced Pumpkin Bread

Ingredients

  • Pumpkin Batter
  • ¼ to ½ cup of chopped pecans
  • ¼ cup raisins
  • 2 tablespoons pumpkin seeds

Directions

  1. Preheat your oven to 375°F.
  2. Grease an All-Clad Pro-Release Loaf Pan with 1 tablespoon of unsalted butter.
  3. Add the pecans and raisins to your prepared pumpkin batter in a large mixing bowl. Stir to combine. When adding the nuts and raisins to the batter fold them in gently to avoid overworking the batter.
  4. Add the batter to the loaf pan roughly halfway up the sides. Top with the pumpkin seeds. You will have enough batter for a second loaf.
  5. Bake in the oven for roughly 45-55 minutes. Use a cake tester by placing in the center of the loaf. If it comes out clean the bread is complete.
  6. Let rest and cool undisturbed for 20 minutes before serving.

Pro Tip:

The pumpkin batter will yield up to two breads - great for a crowd or gifting.
