Pecan Spiced Pumpkin Bread

Ingredients
- Pumpkin Batter
- ¼ to ½ cup of chopped pecans
- ¼ cup raisins
- 2 tablespoons pumpkin seeds
Directions
- Preheat your oven to 375°F.
- Grease an All-Clad Pro-Release Loaf Pan with 1 tablespoon of unsalted butter.
- Add the pecans and raisins to your prepared pumpkin batter in a large mixing bowl. Stir to combine. When adding the nuts and raisins to the batter fold them in gently to avoid overworking the batter.
- Add the batter to the loaf pan roughly halfway up the sides. Top with the pumpkin seeds. You will have enough batter for a second loaf.
- Bake in the oven for roughly 45-55 minutes. Use a cake tester by placing in the center of the loaf. If it comes out clean the bread is complete.
- Let rest and cool undisturbed for 20 minutes before serving.
Pro Tip:
The pumpkin batter will yield up to two breads - great for a crowd or gifting.
