South Dakota Bison "Buffalo" Meatballs


These meatballs are easy to throw together and add some interest to your typical weeknight dinner. Dip them in blue cheese dressing or serve them with your favorite side dish and bring something new to the table.

Ingredients

  • 1 lb ground bison
  • 3/4 cup panko bread crumbs
  • 1 egg
  • 1 tablespoon scallions, sliced
  • 2 teaspoons avocado oil
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • salt and pepper
  • 1/2 cup hot sauce, plus more to toss with

Directions

  1. Preheat oven to 400 degrees.
  2. In a large bowl, combine all ingredients and stir thoroughly until the mixture reaches an even consistency.
  3. Scoop into approximately twenty-four 1-inch meatballs. Place on a greased shallow baking pan. Bake 20-25 minutes or until cooked through.
  4. Toss meatballs with remaining hot sauce and serve.
