South Texas Chili Braised Brisket
Instead of a typical smoked brisket, this version is almost effortless and full of flavor using a slow cooker and smokey dried chilis

Ingredients
- 2 lbs brisket
- salt and pepper
- 1/2 cup Alamo beer (or other light ale)
- 4 cups beef stock
- 2 carrots, chopped
- 1 large white onion, chopped
- 3 dried chili peppers (morita or guajillo)
Directions
- Season brisket generously with salt and pepper
- Sear on all sides in the slow cooker and deglaze with beer
- Add stock, carrots, onions, and chilis
- Baise until tender
