Spicy Vodka Pasta with Chicken and Basil

Ingredients

  • 1 pound of penne, rigatoni, or similar pasta
  • 1 pound of chicken breast, cut into 1-inch pieces
  • 1/2 cup reserved pasta water
  • 2 medium-sized shallots, diced
  • 1/4 cup sundried tomatoes, chopped
  • 4 cloves of garlic, sliced
  • 3 tablespoons of neutral oil
  • 1/4 cup of tomato paste
  • 1 tablespoon red pepper flakes
  • 1/4 cup of vodka
  • 1/2 cup of heavy cream
  • 1/4 cup of fresh basil leaves
  • 1 tablespoon of butter
  • 1/2 cup of Parmesan cheese, freshly grated
  • 1 tablespoon butter

Directions

  1. Prepare and cut the chicken using the All-Clad Forged Chef’s Knife. Season the chicken with salt and pepper. Set aside.
  2. Bring a large 8-quart stockpot filled with water to a rolling boil. Add a generous amount of salt to the water. Pour in the pasta and cook until al dente per the package. Reserve 1/2 cup of the pasta water and drain the pasta. Run under cold water to stop cooking.
  3. Prepare the shallots, sundried tomatoes, and garlic using the All-Clad Forged Paring Knife. Set aside.
  4. In the All-Clad D3 Weeknight Pan, heat 2 tablespoons of neutral oil over medium heat. When the oil is hot, add the chicken pieces and sear for 3 to 4 minutes on each side. Remove from the pan and set aside.
  5. Add an additional 1 tablespoon of neutral oil to the same pan. Place the shallots in the pan and sauté for 4 minutes or until translucent.
  6. Add the garlic, sundried tomatoes, and pepper flakes and cook for an additional minute or until fragrant. Season the ingredients with salt and pepper.
  7. Mix in the tomato paste and cook for 2 minutes or until caramelized and darkened.
  8. Once the tomato paste has caramelized, pour in the vodka and deglaze the pan. Let cook for an additional 2 minutes to cook out the alcohol over a low simmer. Stir in 8 small pieces of basil and let cook for 2 minutes.
  9. Pour the heavy cream into the pan and mix to combine with the ingredients. Bring the sauce to a low simmer and turn off the heat.
  10. Stir in the cooked pasta, Parmesan cheese, and chicken. Add the reserved pasta water and 1 tablespoon of butter. Mix to combine everything together. Serve.
